We are always trying new, exciting things in the kitchen and are always up for the challenge to experiment when a chef or client approaches us to help them out!
Last week we were given the opportunity to collaborate on a very unique dessert idea. Using the finest tempered Valrhona chocolate, we created a number of large 6.5” hollow chocolate spheres.
On site, chefs presented a table side experience to their guests by filling the spheres with caramel popcorn, mini macarons and white chocolate Hershey kisses. They then flash froze them, then dropped them on the table so they shattered like chocolate glass. Guests enjoyed the performance and then were able to eat the whole display!
