On our chocolate production we’ve made the commitment to switch chocolate manufacturers and focus primarily on gourmet chocolate making using strictly couverture chocolate and proper tempering techniques. This results in a far better tasting chocolate, a shiny finished look to the product, and longer overall shelf life.
